The “RISE & WIN Brewing Co. BBQ & General Store” microbrewery,
based in Kamikatsu (which means "rise" and "win"), Tokushima,
a place well known as a "Zero Waste Town", has a newly opened taproom in Tokyo.
The menu has a BBQ plate with grilled crunchy and savory chicken legs
called "Awa Sudachi Dori"; made from locally raised Tokushima chickens.
We also have cafe-styled single plate dishes and easy meals to go, like our "Pulled Pork Sandwich",
and side dishes, like our "Venison Sausage" or "Dried Fruit Plate": all pair well with our craft beers.
For refreshments, we also have original scones and special coffees.
The interior space was designed by Hiroshi Nakamura & NAP
who also designed RISE & WIN Brewing Co. BBQ & General Store.
A huge tree trunk from Kamikatsu is used for the bar counter and used windows are reused in the kitchen.
The walls are colored with persimmon juice and red ocher.
You can imagine yourself at the BBQ garden in Kamikatsu even though you are actually in the taproom in Tokyo.
Enjoy the atmosphere of the international standard taproom right under Tokyo Tower.



TAPROOM
8 beer-tank-styled taps are aligned behind the bar, providing several styles of fresh craft beers.
From our fruity Leuven White flavored with "Yuko",
a citrus fruit from Kamikatsu (representing a zero-waste spirit) to our Pale Ale,
Porter Stout and more.
These are all original craft beers brewed at Rise & Win in Kamikatsu.
We also have guest taps with beer from other Japanese brewers,
as well as hard ciders and beers from Portland, Oregon.

BREWING DIRECTOR
Ryan Jones, the brewing director at
Rise & Win Brewing Co., is from New York and
learned about brewing while working at a
craft brewery in New York. His grandfather
also worked in a New York brewery. Ryan is
very proud to try to follow in his grand-
father`s footsteps and wants to introduce the
rich world of tasty beer to people in Japan.

Medium-bodied with a malt sweetness and a delicate hop finished. Roasted Naruto Kintoki
is also used in this beer, adding a sweetness and aroma. Coffee is also used as a secret spice.

IPA -
Kamikatz IPA is brewed with Kamikatsu Bancha
-tea leaf. It's lactic acid fermented tea
that quite unique fermentation style in
Japan.We chose 4 types of US and NZ hops
for this IPA. It has gorgeous citrus flavor
and crispy bitterness.

SUSTAINABLE & RESPONSIBLE
For the Zero-Waste principle, creators from many fields have embodied the 3Rs:
“Reuse”, “Reduce” and “Recycle”.Recycling and reusing is creative and cool.
This philosophy is presented in Kamikatsu style.
We are also planning another project to provide an educational opportunity to create a more “sustainable" society and follow our "responsibility” to connect the culture of Kamikatsu and the Zero-Waste principle.

Bar Counter with Huge Trunk

The huge trunk is overwhelming even from outside of the taproom. This huge cedar was grown in Kamikatu, Tokushima and thinned out from sacred trees to protect Shinto gods representing the greatness of nature.

Chandelier Assembled with Empty Glass Bottles

We have bottle chandeliers in Tokyo TAPROOM as well as the GENERAL STORE in Kamikatsu. Empty glass bottles and chipped cups were processed one by one offering a brilliant decor.

Walls Made with Wood from Kamikatsu

The walls of the Taproom are made of wood from Kamikatsu. The wood is colored with persimmon juice and red ocher.

Very Original Shelf Made of Recycled Scrap Wood

The uniquely shaped shelves and tables are all made of scrap wood from the Zero-Waste rubbish station in Kamikatsu town. The tables and other furniture, even a rice mill and farm tools, are used with each other to create interesting shelves and pieces.

Brewery Uniforms Made of Used Clothes

Used clothes brought as garbage to the rubbish station in Kamikatsu are restructured into the staff aprons. The unique patterns are made by mending together many colors and clothes are impressive. Bandana-like pocket cloth is the final touch.

Newspapers × Typography

We printed typography on old newspapers and used them to wallpaper the restroom. Every single item is handmade and thus unique and distinctive. Typography that is now rare in Japan is still alive here.

Used and old tools are remade into a hat hook. You are welcomed by various types of interesting tools.

Bricks from Old Buildings

Brick waste from demolished old buildings in Shanghai, China are re-processed and reused for the floor. Its unique texture is fascinating.
